Chef's Corner


Chef Bruce Davison

Bruce apprenticed for several years, in a first class hotel in Canada. Working for top-notch European chefs, he began to learn all aspects of the culinary profession. Although he didn't pursue a culinary career at that time, he has always enjoyed cooking.

Bruce went to culinary school. He attended, and graduated from, Le Cordon Blue Academy in Sacramento, CA. Bruce earned Honor Roll and Escoffier Club ropes at the graduation ceremony.

In addition to learning French Classical Cuisine techniques from highly regarded chef instructors, Bruce did an extern-ship at The Boulevard Bistro in Elk Grove CA. There he created weekly menus and executed his creations, all under the guidance of Chef Bret Bohlmann.

Gourmet Custom Dinners

Custom Dinner Service available upon request and is dependent on Chef's schedule; at least one week's notice is required in order to shop and prepare

Custom dinners are available to our guests! For parties of two, and up to ten, Chef Bruce will customize a menu just for you! Using fresh, seasonal ingredients, and fine meats from local area vendors, he will put together a menu of three to five courses (typically $100/person + tax and gratuity, depending on the menu we create for you).

Dinners are served by candlelight, either in the dining room, or on the back patio under the stars. Please contact Wendi to discuss personal requests for your upcoming visit. We need at least one week's notice to accommodate dinner requests; schedule dependent.

Cooking Classes with Chef Bruce!

You'll absolutely love cooking in the Black Bear Inn Kitchen! - Learn from a pro in a Chef's dream kitchen with one of our Cooking Classes at the Inn. With a minimum of 2 participants, and a maximum of 6 per class, our guests can experience an optional experience at our Bed & Breakfast.
